Elevate Your Cocktails with Extra Virgin Olive Oil

When you think of cocktails, olive oil may not be the first ingredient that comes to mind. However, top mixologists know that high-quality extra virgin olive oil (EVOO) adds a silky texture and a subtle, fruity depth that enhances a variety of drinks.

Fat Washing: The Secret to Olive Oil Cocktails

Fat washing is a technique used in mixology to infuse spirits with the unique flavors of fats, including olive oil. If you've ever tried a bacon- or butter-infused cocktail, chances are fat washing was behind it. Here’s how to do it with extra virgin olive oil:

Choose Your EVOO – Select a high-quality olive oil with a flavor profile that complements your chosen spirit. EVOO flavors range from fruity and floral to herbaceous and peppery, so experiment to find the perfect pairing.

Combine with Spirits – In a glass jar, mix your selected olive oil with the spirit of your choice at room temperature.

Infuse & Rest – Shake or stir the mixture well, then let it sit at room temperature for several hours or up to a few days to allow the flavors to meld.

Chill & Separate – Transfer the mixture to the refrigerator or freezer until the olive oil solidifies. This step helps separate the fat from the spirit.

Strain & Store – Once solidified, remove the oil and strain the spirit through a fine-mesh sieve or cheesecloth to remove any remaining particles. Store the infused spirit in a clean, labeled bottle for future cocktail use.

This technique works because olive oil contains polyphenols, which contribute to its rich flavor and health benefits. Since these compounds are water-soluble, they transfer from the oil to the spirit, creating a well-balanced, flavorful infusion.

A smooth and citrusy twist on a classic margarita with a silky EVOO finish.

Ingredients:

2 oz tequila
¾ oz fresh lime juice
½ oz agave syrup
¼ oz high-quality extra virgin olive oil
Ice
Sea salt (for rim)
Lime wheel (for garnish)

Instructions:

  1. Rim a glass with sea salt and set aside.
  2. In a shaker, combine tequila, lime juice, agave syrup, and EVOO.
  3. Shake well with ice, then strain into the prepared glass over fresh ice.
  4. Garnish with a lime wheel and enjoy the luxurious texture of EVOO in every sip.
