The Tasting Process
- Pour – Add about one teaspoon of a single varietal olive oil into a small cup or glass.
- Warm – Hold the cup in your palm, cover the top with your other hand, and gently swirl for about 30 seconds to warm the oil and enhance its aroma. Keep it covered until you're ready to smell.
- Smell – Uncover the cup, bring it close to your nose, and take a deep inhale. Try to identify the different aromas present in the oil.
- Slurp – Take a small sip while slurping noisily. This aerates the oil, helping to release and spread its natural flavors across your palate.
- Savor – Swallow and pay attention to the taste sensations. Notice the balance of fruitiness, bitterness, and pungency in each olive oil.
